Healthier Homemade Comfort Food Candy

I was writing this morning. It’s raining out. It’s the middle of October in the Northeast of America.

This means I am craving something comforting because, duh, I’m a human being.

If you’re like me and you want something tasty but are mindful that sometimes tasty things with processed sugar mean you’ll feel even WORSE later, try making this treat that I found online and modified slightly based on what I had on hand.

Here are the ingredients and basic instructions I followed, have fun substituting things in or out to make your own healthier treat creation!

INGREDIENTS:

1 banana

1/2 cup peanut butter

1 cup oats

1.5 cups fruit (I used some homemade blueberry/peach jam and cranberry sauce and defrosted summer cherries)

2 Tablespoons chia seeds

1 Tablespoon real maple syrup

DARK CHOCOLATE (I used 72% bars I bought on sale at Whole Foods and a good handful of Ghiradelli 60% chocolate chips)

1 Tablespoon coconut oil

INSTRUCTIONS:

line muffin tin with paper or silicone cups

mash banana with a fork in a medium-sized bowl

mix in peanut butter and oats and spoon out a tablespoon into a ball

place in liners and mash down, create a small dent in the center (handle these as little as you can)



mix berries, chia seeds and maple syrup with a hand wand or small blender

add ~1 Tablespoon to each cup (in the dent, obvs)

melt down chocolate and coconut oil in a small saucepan

pour over the jam-filled creations until covered (or your chocolate runs out)

put in the fridge for 1 hour or the freezer for 15 minutes
