Summer Porch Salad

I love when I make something and it turns out delicious. And then I make it again, and it comes out delicious--again.

This is especially fun when I don't use a recipe.

But I made one up, so you can make this awesomeness, too. Picture yourself rocking on a front porch somewhere, in the warm summer sunshine. That's what I was doing when I was eating this and took this picture.

 

Summer Porch Salad

Ingredients 3 ears roasted or grilled corn, scraped off the cob 2 large handful of cherry or grape tomatoes, diced 1 cup red onion, minced 1 Tbsp balsamic vinegar 1 Tbsp extra virgin olive oil 1 tsp dried basil or fresh is even better! 1 can organic black beans

Instructions 1) In a large bowl, combine everything and stir well. 2) Serve and eat cold.

Throw your head back and thank heavens for summer and the bees that make produce possible.
