7-Minute Tacos

Friends, the key to success with this one is preparation. Prep these parts below the day before or over the weekend and store in tightly sealed containers. With that part done, you'll be able to throw the meal together in 7 minutes.

7-Minute Tacos

Ingredients

6 organic corn taco shells 1 can organic refried beans prepped guac, salsa, cheese, lettuce (see below for prep. instructions) 1 8-oz container organic full-fat sour cream (one serving = 2 Tbsp)

Prep the guac: mash 3 avocados mince 1 clove garlic dice 1 small tomato chop up 2 teaspoons of cilantro 1/2 tsp lemon juice add a pinch of salt

Prep the salsa:

dice 2 small tomatoes dice 1 small onion mince 1 clove garlic chop 1 tsp cilantro

Prep the cheese:

grate 4-6 ounces of organic cheese, cheddar or colby jack

Prep the lettuce:

shred 2 cups romaine or iceberg (this is the only time I use or consume either of these lettuces)

Instructions

1) In a small saucepan, warm the refried beans over low heat. Add a splash of water to help them mash down and stir. 2) Place the taco shells in a toaster oven or regular oven for 4 minutes. 3) While the beans are warming and shells are toasting, line up the guac, salsa, sour cream, lettuce and cheese like an assembly line on your counter. 4) When the shells are done, start with loading the beans right from the pan, move down your assembly line of fillings and BAM! You're eating in 7 minutes.
